And when paired with something as simple as garlic bread and a fresh iceberg salad topped with homemade Italian dressing? You have a full spread that feels like a restaurant-quality meal, made with the love and care only a home kitchen can offer.

Simple and Delicious Chicken Alfredo
Equipment
- A large saucepan
- A medium saucepan
- 1 Large mixing bowl
- 1 Medium mixing bowl
- 1 Large ziplock bag
- 1 Large frying pan
- 1 Wooden spatula
- 1 Skimmer spoon
- 1 Pasta drainer
- 1 Sharpened knife
Ingredients
Chicken
- 3 Pounds Organic Chicken Breast (I prefer organic due to the health benefits of it but feel free to buy the chicken breast of your choice)
- 2 Large Eggs
- 2 1/2 Tsp Himalayan Salt
- 3 Tsp Freshly Ground White or Black Pepper
- 4 Tbsp Olive Oil
- 1/2 Cup Cornstarch
- 2 Tbsp Lemon Juice
Fettuccine Alfredo
- 24 Onces Fresh or Dry Fettuccine Pasta
- 1 Cup Butter
- 3/4 Pint Heavy Cream
- 4 Cloves Fresh Garlic
- Salt and Pepper To Taste
- 1/2 Cup Freshly Grated Parmesan Reggiano Cheese
- 3/4 Cups Grated Pecorino Romano Cheese
Instructions
Chicken
- Rinse, pat dry and slice your chicken breasts into thin strips (about 3 inches thick each) and place in a large mixing bowl

- Season the chicken with salt and pepper
- Whisk the eggs in a medium bowl
- Place cornstarch inside a large ziplock bag
- Add the seasoned chicken strips in batches inside the whisked eggs, allowing the excess egg mixture to drain back into the bowl
- Immediately place the chicken strips inside the cornstarch bag. Give a it a vigorous shake until the strips are completely coated
- Remove the chicken from the bag and let rest on a plate. Repeat these steps until all the chicken strips are coated

- In a large frying pan, heat the olive oil to medium heat
- Add chicken strips to the pan and fry until golden brown, about a minute on each side. Repeat until all the chicken strips are fried, pat dry the strips to get rid of any excess oil. Add in the lemon juice and set aside.

Fettuccine Alfredo
- Gather all of your ingredients.
- Bring a large pot of lightly salted water to a boil. Add fettuccine pasta and cook for 8 to 10 minutes, or until al dente; drain and set aside.
- Finely chop the garlic cloves
- Melt butter in a large saucepan and cook the garlic until fragrant.

- Add the cream to the saucepan over low heat; add salt, pepper to taste
- Increase heat to medium; stir in grated Pecorino Romano and Parmesan Riggiano cheese until melted and sauce has thickened.
Notes
- It is essential not to let your sauce boil, otherwise the sauce will “break”, making it grainy and watery instead of creamy.
- Try to keep your chicken strips as separate from each other as possible after coating with cornstarch.This will allow them not to stick to each other too much and make your experience less messy and more fun.
- Using a ziplock bag when coating, allows you to coat more clean and easy, and it saves clean up time
- I like using white pepper instead of black pepper when using this recipe, plating looks more appealing when you can’t see the black pepper flakes inside the white pasta.
- Pair it with warm garlic bread and a chilled iceberg salad tossed in a simple dressing of olive oil, red wine vinegar, garlic, oregano, and grated parmesan, and you have a meal that looks like you spent all day in the kitchen—but really, you spent it being present with your guests.
