Ingredients
For the Wraps
- ½ lb ground chicken
- 1 tablespoon olive oil
- ¼ cup sun-dried tomato pesto see recipe below
- 2 8- inch avocado wraps warmed
- ½ cup shredded part-skim mozzarella cheese
- 8 grape tomatoes halved
- 2 slices red onion separated into rings
- 1 cup shredded lettuce
- Low-carb or baked chips for serving
For the Sun-Dried Tomato Pesto:
- 1 8.5 oz jar sun-dried tomatoes packed in oil
- 1 cup fresh basil leaves
- ½ cup grated Parmesan cheese
- ¼ cup pine nuts
- 3 cloves of garlic
- ¼ tsp kosher salt
- ¼ tsp black pepper
- ½ cup olive oil
Instructions
- In a food processor, blend the sun-dried tomatoes, basil, Parmesan, pine nuts, garlic, salt, and pepper. Slowly stream in the olive oil until the mixture is smooth and emulsified. Store leftovers in the fridge.
- In a large skillet, heat olive oil over medium heat. Add ground chicken and cook for 5–6 minutes, or until fully cooked and no longer pink. Drain excess liquid.
- In a bowl, combine the cooked chicken with ¼ cup of the pesto.
- Spoon the chicken pesto mixture evenly onto each warmed wrap. Layer with cheese, tomatoes, onion, and lettuce. Roll up tightly, slice in half, and serve with a handful of chips or veggie sticks.
