Cooking red snapper is a tradition in many cultures, especially in the Caribbean and Latin America, where fish is often prepared with bold flavors and nourishing simplicity. When combined with coconut milk, peppers, and spices, the fish becomes tender and infused with rich flavor. It’s the kind of dish that feels both comforting and celebratory, making it the perfect meal to mark the beginning of something new.

Red Snapper in Coconut Sauce
Ingredients
- 1 lb red snapper fillets
- 2 tbsp lime juice
- 1 tbsp oregano
- 1 cup coconut milk
- 1 Cuban and/or red bell pepper diced
- 1 tsp black pepper
- 1/2 tsp Himalayan salt
- 1/3 cup red onion
- 5 garlic cloves minced
- 1/4 cup tomato sauce
- 1 packet Sazón Goya
- 1/3 cup cilantro
Instructions
- Season the Fish: On a large plate, coat the snapper fillets with lime juice, ½ teaspoon oregano, salt, and black pepper. Set aside.
- Build the Sauce: In a skillet over medium-high heat, combine coconut milk, onion, peppers, garlic, and tomato sauce. Stir in the remaining oregano, Sazón, and additional salt and pepper. Bring to a boil, then reduce the heat and simmer until the sauce thickens, about 10 minutes.
- Cook the Fish: Add the red snapper in a single layer. Simmer for 10 minutes, spooning sauce over the fillets. Avoid stirring or flipping to keep the fish intact.
- Finish and Serve: Sprinkle with fresh cilantro and adjust seasoning to taste. Serve with black beans, white rice, and beet salad for a balanced, flavorful meal.
Notes
- You can substitute grouper, tilapia, or another tropical fish for this recipe.
- No oil is needed; the coconut milk provides plenty of richness.
- Be gentle with the fish. Instead of stirring, carefully spoon sauce over the fillets to keep them whole.
