Instructions

- Spray your mini muffin tins with your preferred cooking spray. With a paper towel, wipe away excess oil, then lightly sprinkle flour over the tins and shake off the rest. I do this to prevent my muffins from sticking to the tin.
- In a bowl, combine the melted butter and eggs. Beat until the mixture thickens.
- In a separate bowl, mix the flour and brown sugar, breaking up any sugar lumps.
- Fold the butter-and-egg mixture into the flour-and-sugar mixture until just combined.
- Gently fold in the chopped pecans.
- Spoon the batter into the prepared tins, filling each cup about ¾ full so your pecan mini muffins have room to rise.
- Bake for 12–15 minutes, or until the tops are lightly golden.
- Let them cool, remove from the tin, and enjoy with a cup of coffee, tea, or a quiet moment to yourself.
